Recipe: Pickled Beets

Ingredients

1 lb. beets
1/2 cup cider vinegar
1/2 cup water
2 Tbsp. sugar
1/8 tsp. pepper
1/8 tsp. salt



Directions

Trim off beet greens, leaving 2" of the tops on.  Wash beets.  Place in a large
2-quart saucepan, cover with water, bring to a boil.  Reduce heat to medium,
simmer 20-40 minutes until tender when pierced with a fork (depends on the
beet size).  Drain, peel, slice.  Bring vinegar, water and sugar to boil.  Place
beets and vinegar mixture in a 1-quart serving dish, cover and refrigerate until
serving.  Drain before serving.  Makes 4 servings.
