1 lb. angel hair pasta
2 tbsp. butter
2 tbsp. olive oil
8 sundried tomatoes, cured in oil, finely chopped
1/4 c. chopped fresh basil
1/4 c. chopped fresh parsley
4 cloves garlic, minced
2 sweet red peppers, roasted, peeled and julienne
2 green peppers, roasted, peeled and julienne
1/4 c. freshly grated Parmesan cheese
Salt and pepper to taste
1. Prepare ingredients
1. Roast, peel, and julienee the two Green Peppers and Red Peppers.
2. While pasta is boiling, melt butter in saucepan, add olive oil, then remaining ingredients except Parmesan.
3. Add to drained pasta and toss to mix. Top with Parmesan.
