Recipe: Parmesan Bread Pudding with Bacon

Ingredients

1 tblspn olive oil, 2 garlic cloves sliced thin, 1/2 crushed red pepper flakes, 1 med bunch brocolli 1/2 inch pieces, 2 tsp kosher salt, 1/2 tsp ground pepper, 6 large eggs, 1 1/2 cups whole milk, 1/2 pound country bread in 1 inch pieces, 1/2 cup grated parmesan cheese, 6 slices bacon.



Directions

Preheat oven 350 degrees. Heat oil in large skillet med heat. Add garlic and red pepper and stir until garlic is soft. Add brocolli and salt and pepper and cook tossing until wilted and cool slightly. Whisk eggs, milk, 2 tsp salt and pepper in large bowl and add brocolli, bread and 1/2 cup parmesan, toss and transfer to 1 1/2 quart baking dish. Top with bacon and rest of parmesan. Bake until puffed
