1 Organic Onion, Finely chopped
2 Organic Garlic Cloves, Finely Minced
1 Organic Shallot, Finely Chopped
1 Tsp Thyme
2 Tbsp Organic Olive Oil
1/2 Cup Mayonnaise
1/2 Cup Sour Cream
1/3 Cup Organic Chives, Finely Chopped
1/2 Organic Lemon, Freshly Juiced
Sea Salt and Black Pepper, to Taste
1) Using a cast iron skillet, heat oil and add the onion, garlic, and thyme. Stir occassionally and cook until onion is carmalized (approximately 30 minutes).
2) Combine the mayonnaise and sour cream in a medium mixing bowl. Add the onions, shallot, chives and lemon juice and mix well. Add salt and pepper, to desired taste. Combine well.
3) Refridgerate for at least 2 hours to combine flavors (better if it sits overnight)
