2 1/2 Tbsp Extra Virgin Olive Oil
1/2 Tsp Honey
1/2 Tsp Wholegrain Mustard
1 Organic Lemon, Juiced
1 1/2 Cups Organic Purple Broccoli, Cut into Pieces
1-2 Organic Garlic Cloves, Sliced
2 Cups of Organic Whole Grain Mix, Cooked
2 Tbsp Fresh Parsley, Roughly Chopped
1/2 Cup Organic Kale, Roughly Chopped
2 Organic Radishes, Sliced Thinly
8 Ounces of Cooked Salmon
Pepper, to Taste
1) Mix 2 tablespoons of the olive oil with the honey, mustard, lemon juice and pepper.
2) In a 2-quart saucepan add water and bring to a boil. Add the purple broccoli and cook for 3-4 minutes, you'll want them tender but not soft. Drain.
3) Put the remaining oil in a frying pan on medium heat. Add the garlic and allow to sizzle for about a minute. Add the grains and separate, mixing into the garlic. Add the broccoli, mustard dressing, parsley, kale, and radishes. Combine and add more pepper, if needed.
4) Gently stir in the salmon.
5) Serve and enjoy!
Also makes great leftovers, I like to eat it cold the next day!
