Recipe: Pickled Beets

1 Lb Organic Beets
1/2 Cup Cider Vinegar
1/2 Cup Water
2 Tbsp Sugar
1/8 Tsp Pepper
1/8 Tsp Salt



1) Trim off beet greens, leaving 2" of the tops on. Wash beets. 
2) Place in a 2-quart saucepan, cover with water, bring to a boil. Reduce heat to medium, simmer 20-40 minutes until tender when pierced with a fork (depends on the beet size). 
3) Drain, peel, slice.
4) Bring vinegar, water and sugar to boil.
5) Place beets and vinegar mixture in a 1-quart serving dish, cover and refrigerate until serving. 
6) Drain before serving.
