1/2 Cup Organic Greek Yogurt, Plain
1/4 Cup Organic Mayonnaise
2 Tbsp Organic Lemon Juice, Freshly Squeezed
2 Tbsp Organic Green Onions, Sliced Thinly
1 Tbsp Organic Parsley, Fresh and Minced
3 Cups Chicken, Cooked and Diced (Chilled)
4 Slices of Bacon, Cooked and Chopped
1 1/2 Cups Organic Roma Tomatoes, Seeded and Diced
1/2 Cup Organic Celery, Diced
1 Organic Hass Avocado, Diced
1 Tbsp Tabasco (optional)
Salt and Pepper, to Taste
Romain Lettuce Leaves, for Serving
1) In a medium bowl stir together the mayonnaise, Greek yogurt, lemon juice, green onions, parsley, hot sauce (optional) then season with salt and pepper, to taste, and mix thoroughly.
2) Add the chicken, tomatoes, celery, and bacon to a large mixing bowl. Combine the dressing mixture and mix well. Gently fold in the avocado pieces.
3) Spoon into lettuce leaves and serve. Roll into a wrap before eating and enjoy!
