Recipe: Salmon with Apple, Cucumber, Avocado Sauce

Ingredients

4 Salmon Fillets, With Skin (6 Ounces Each)
1 Organic Lemon, Quartered
2 Tbsp Olive Oil
T Tbsp Butter, Melted
Fresh Parsley (Optional)
For the Salsa:
5 Tbsp Extra-Virgin Olive Oil
1 Organic Gala Apple, Cored and Finely Chopped
1 Organic Cucumber, Finely Chopped
1 Organic Hass Avocado, Pitted and Finely Chopped
1 Tbsp Fresh Mint, Thinly Sliced
1/2 Jalapeno, Seeded and Minced
1/2 Organic Lime, Juiced
1/2 Organic Lemon, Juiced



Directions

1) Combine the apples, cucumbers, avocado, mint, jalapeno, olive oil, lemon juice, and lime juice in blender with a dash of salt and pepper. Blend until smooth and pour into a medium bowl. Cover and refridgerate for later.
2) Preheat the oven to 350 degrees.
3) Heat 2 tbsp of olive oil in a cast iron skillet over medium-high heat. Dry the salmon by patting it dry with paper towel, season with salt and pepper. Add the salmon, skin down, and cook for 5 minutes (or until the skin starts to release from the skillet.
4) Lightly baste the fillets with the melted butter. Place the skillet in the oven and cook the salmon for an additional 5 minutes. The salmon should easily flake with a fork.
5) Transfer salmon to a serving dish and top with the apple and avocado sauce or serve on the side. Serve with a lemon wedge and garnish with parsley, if desired.
