1 Dozen Eggs
12 Slices of Bacon
12 Tsp Diced Organic Tomatoes
1-2 Cups Shredded Pepperjack Cheese
1) Spray muffin pan with non-stick cooking spray and preheat oven to 350 degrees.
2) Place a slice of bacon on the bottom of each muffin well.
3) Put 1 Tsp of diced tomatoes on top of each bacon slice then sprinkle with shredded pepperjack cheese.
4) Break one egg per spot, top with salt and pepper to taste.
5) Bake for 18-20 minutes until yolks are firm and whites are cooked through.
